This Lent, I gave up my usual fried food and pizza, but I am adding this year, by trying to eat a “God-made” diet and avoiding man-made processed food! After only a few weeks, I already feel energized, cleansed and fit!
For an appetizer, made homemade guacamole with fresh salsa from health food store and added leftover avocado from making homemade babyfood.
Also, made kale chips, using this simple recipe – http://allrecipes.com/recipe/baked-kale-chips.
Chicken w/vegetables – cook the chicken on skillet with olive oil, white wine, garlic sauce. Then add whatever vegetables you have – I used spinach, onions, artichokes, and sun-dried tomatoes. Then I added a crunchy veggie twist by throwing in the skins left over from peeling my homemade baby food – zucchini and yellow squash.
Created a stir-fry vegetable medley with green beans, broccoli, onion, sautéed in olive oil with seasonings.
For dessert, make a bowl of seasonal fruit or berries.
