DESSERT – Pumpkin Pie Overnight Oats. In a mason jar, mix together 1/3 cup old fashioned oats, 1/3 cup milk of your choice, 1/2 mashed ripe banana, 1/2 scoop vanilla protein powder, 2 heaping tablespoons pure pumpkin purée, 2 tbsp. vanilla non-fat Greek yogurt (or almond yogurt), 1 tsp. chia seeds, generous dash of cinnamon and nutmeg. Cover and refrigerate overnight. Top with pecans, pepitas, and dried cranberries in the morning!
