Happy National Zuc Day!

In honor of this diverse vegetable, below is a How To Prepare a Full Course Baby Meal with Zucchini: Just steam, purée and feed!

1. PEEL OR NOT PEEL: Since I grew the Zuc with no pesticides and its skin is high in vitamins, I’m going to not peel. See my blog post about making your own baby food and whether or not to peel.

2. STEAM the Zuc until you can easily stick a fork in it.

(I “Bulk boil” with a bunch of other veggies – that way they suck up water and are more moist for the puree and more easy for baby to eat).

2. COOL for at least an hour before puree, you don’t want ever feed baby hot food, hurt yourself or harm the machine. (If you can, make it a 2 day process, steam a bunch of veggies and let them cool over night or at least an hour before the food making begins. Daddy can handle this part.

PUREE: I use the BabyBullet–but any blender or puree machine will do. When you puree Zuc after boiling, it will be watery, so I add always add something pre/post purée to thicken it up. You can make it one food group or a whole meal.

3. MAKE IT A MEAL by adding protein/veggies/fruits or even cereal. Add dairy by throwing in some ground feta cheese, cottage cheese or Greek yogurt. Add grilled chicken or any protein you’d like. (When I’m in a rush, I use canned chicken salad or turkey lunch meat – whatever you got that’s lean protein).

SOLIDS: If your baby can eat solid chunks, then skip the purée altogether and dice your Zuc with the other ingredients.
