One of our favorite things about summer is a meal from the grill with all the garden-fresh fruits and veggies! Today, we are sharing some delicious recipes for summer suppers and sides using plant-based ingredients and even some enhancements with edible essential oils.

πŸ₯’Dill Vitality Oil Cucumber Salad
This is a favorite summer recipe for my family and a great, easy side dish to use up those garden fresh cucumbers!
2-3 large cucumbers, sliced
Sliced onions and tomatoes – optional
1/2 cup sour cream
1/2 cup mayo
1/2 tablespoon white vinegar
1 drop Dill Vitality Oil
Salt and pepper to taste
1-3 tablespoons milk for consistency
Mix the dressing ingredients and then add in the veggies.

πŸ₯©Perfect Grilling Marinades

Fire up your summer with essential oil infused marinade! All recipes are enough for 1-2 pounds of protein of your choice:

🍊Citrusy Marinade
3/4 cup olive oil
1/2 cup soy sauce
1 tablespoon grated onion
Juice of 1 lemon
2 drops Orange Vitality Oil
2 Drops Lemon Vitality Oil
1 drop Ginger Vitality Oil

πŸ‹Mediterranean Marinade
3/4 cup olive oil
1/2 cup soy sauce
1 tablespoon red wine vinegar
1 clove minced garlic
1 drop Orange Vitality Oil
2 drops Lemon Vitality Oil
1 drop Black Pepper Vitality Oil

Combine all ingredients and pour over meat in a shallow glass bowl or baking pan. Cover and refrigerate for 1-4 hours before grilling. Discard marinade after use.

πŸ₯”Rosemary Vitality Roasted Potatoes
I like to soak the potatoes in water for several hours in advance and then drain and dry them thoroughly prior to cooking…this releases the starch and makes for crispier potatoes!
6-8 red potatoes, washed and cubed (peel if you’d like)
2 tablespoons olive oil
1 drop Rosemary Vitality Oil
2 teaspoons minced garlic
1 teaspoon kosher salt
1/2 teaspoon black pepper
Toss the potatoes with the remaining ingredients and place on a baking sheet. Bake at 400 degrees F for 45-60 minutes under tender and crispy.

This refreshing summer beverage is made with Lemon Vitality, however lime can be substituted, too!
2 cups strawberries
4 cups water
Juice of 1 lemon
5 drops Lemon Vitality Oil
Agave nectar or honey to taste
Puree strawberries in a blender. Pour into a glass pitcher, add water, lemon juice, Lemon Vitality Oil. Mix well and sweeten with agave or honey to taste.
